Why it tastes
different
We burn fruitwood — rambutan mixed with jackfruit, not ordinary firewood. Fruitwood smoke is sweeter, and it carries into the edge of the crust as the pizza bakes.
An electric oven can do the heat. It can’t do the smoke.
